CheKine™ Micro α-Amylase Activity Assay Kit provides a convenient tool for detection of α-Amylase Activity. The principle is that starch hydrolase catalyzes the hydrolysis of starch to produce reducing sugar, which reduces 3, 5-dinitrosalicylic acid to produce brown-red substance with an absorption peak at 540 nm. Amylase activity was calculated by measuring the absorbance increase rate at 540 nm. |

Background |
Starch hydrolases, including α -amylase (α -Al, EC 3.2.1.1) and β -amylase (β -Al). α -amylase randomly catalyzes the hydrolysis of α-1, 4-glycosidic bond in starch to generate glucose, maltose, maltose, dextrin and other reducing sugars, while reducing the viscosity of starch, so it is also called liquefaction enzyme. |
